Maple-Mustard Cauliflower Roast

Maple-Mustard Cauliflower Roast

Notes

Can also be traditionally steamed, large-pot shallow-water steamed or boiled about 6 minutes until tender-crisp. Liquid smoke is optional; caramelized edges provide most of the flavor. Hickory, pecan, or apple liquid smoke all work well if using.

Ingredients

  • 1 head cauliflower, leaves removed
  • 1/4 cup maple syrup
  • 1 1/2 tbsp dijon mustard
  • 1 tbsp old-style mustard or stoneground mustard
  • 1/8 tsp ground black pepper
  • 1/4 tsp paprika
  • 1/4 tsp liquid smoke (optional)

Instructions

  1. Steam cauliflower on high pressure for 1 minute. Quick release.
  2. Whisk maple syrup, mustards, black pepper, paprika, and liquid smoke if using.
  3. Rub glaze evenly over the steamed cauliflower.
  4. Air fry at 390°F for 30–40 minutes, rotating to brown all sides.
  5. Alternatively, bake at 425°F, checking every 5 minutes starting at 20 minutes.
  6. Use parchment or a silicone liner to prevent sticking.
