Maple-Mustard Cauliflower Roast
Whole roasted cauliflower glazed with maple and mustard.

head cauliflower, leaves removed
1/4 cup
maple syrup
1 1/2 tbsp
dijon mustard
1 tbsp
old-style mustard or stoneground mustard
1/8 tsp
ground black pepper
1/4 tsp
paprika
1/4 tsp
liquid smoke (optional)
- Steam cauliflower on high pressure for 1 minute. Quick release.
- Whisk maple syrup, mustards, black pepper, paprika, and liquid smoke if using.
- Rub glaze evenly over the steamed cauliflower.
- Air fry at 390°F for 30–40 minutes, rotating to brown all sides.
- Alternatively, bake at 425°F, checking every 5 minutes starting at 20 minutes.
- Use parchment or a silicone liner to prevent sticking.

Can also be traditionally steamed, large-pot shallow-water steamed or boiled about 6 minutes until tender-crisp. Liquid smoke is optional; caramelized edges provide most of the flavor. Hickory, pecan, or apple liquid smoke all work well if using.
