Chicken-Style Bouillon Powder

Notes

This is a low-salt, plant-based chicken-style bouillon powder inspired by the Vegan Chicken Bouillon Powder recipe by Jasmine from Ve Eat Cook Bake, adjusted to personal taste.

Use anywhere chicken bouillon powder is called for, or as a broth substitute: 1 tsp powder + 1 cup water = 1 cup broth.

A single juniper berry won’t make or break the recipe, but omitting small ingredients will slightly reduce flavor complexity. Juniper berries are also commonly found in pickling spice blends if you want to borrow one.

Ingredients

  • 3/4 cup nutritional yeast
  • 1 tsp sea salt
  • 1/2 tsp ginger powder
  • 1/2 tsp turmeric powder
  • 1 tsp ground black pepper
  • 1 tsp dried marjoram
  • 1 tsp dried tarragon
  • 1 tsp paprika powder
  • 1 tsp dried rosemary
  • 2 tsp dried sage
  • 1/4 tsp celery seeds
  • 2 tsp dried thyme
  • 2 1/4 tsp granulated garlic
  • 2 1/4 tsp granulated onion
  • 3/4 tsp dried parsley
  • 1 bay leaf
  • 1/2 tsp mustard powder
  • 1 juniper berry

Instructions

  1. Add all ingredients to a small blender with a flat blade or spice grinder.
  2. Blend to a fine powder.
  3. Store in a sealed glass jar in the cupboard. 1 tsp powder + 1 cup water = 1 cup broth.
