Pepperoni Seasoning

A peppery, smoky spice blend with fennel and anise, meant for American-style pepperoni flavor.

Notes

This recipe contains no added salt so it can be mixed with soy sauce and liquid smoke or smoked salt per the dish recipe.

There are many ways to crush fennel: the bottom of a solid glass, a wooden dowel, mortar & pestle are just a few.

Anise seeds are used in this recipe, and they are different than star anise.

Crush the fennel so it’s fragrant, but don’t grind it into a powder.

Ingredients

  • 1/2 tsp ground black pepper
  • 1/2 tsp ground white pepper
  • 1 tsp mustard powder
  • 1/2 tsp granulated garlic
  • 3/4 tsp fennel, crushed but not powdered
  • 1/8 tsp cayenne
  • 3 tsp paprika
  • 1/2 tsp anise seeds, whole

Instructions

  1. Stir all ingredients together in a small bowl.
  2. Transfer to an airtight jar and store with your spices.
