Pickled Red Onions

Quick pickled red onions made with vinegar, water, salt, and maple syrup.

Pickled Red Onions
1
red onion, thinly sliced
2/3 cup
water
1/3 cup
white vinegar
1/2 tsp
kosher salt
1/2 tsp
maple syrup
  1. Place the sliced red onion in a jar or container.
  2. Add the water, white vinegar, kosher salt, and maple syrup.
  3. Put a lid on the jar and swirl gently to combine for 15-20 seconds.
  4. Press onions beneath liquid as much as possible
  5. Refrigerate 30 mins until lightly pickled. Lasts about 7 days.

These are "quick pickled" and can be ready in about the time it takes to cook rice.

If you're in a hurry, leaving them on the countertop and agitating a few times helps them pickle faster.
